I never posted this because my camera's battery was not charged, but this is a delicious peanut coconut chicken stew that I had made to prepare myself for a long day. It was perfect, and my boyfriend even wanted seconds (as if that is new anyway). I let him handle the raw meat because it grosses me out until its cooked, but it would have been good with just veggies. I adapted it from here.
